About me
My name is Iryna Demianiuk, and I am a cheesemaker. My desire for a healthy lifestyle led me to cheesemaking. It became my way to find balance and emotional well-being. Each head of cheese was not only delicious and healthy but also brought me inner peace and a sense of satisfaction from what I had made with my own hands.
My journey in cheesemaking began in 2009 with the purchase of a farm near Kyiv and a herd of Saanen goats. In the spring of 2010, when my goats kidded, there was an urgent question: what to do with the milk? Bryndza, made according to Bessarabian technology, became my first cheese, and this experience laid the foundation for the development of my business.
In 2010, my enterprise became the first breeding reproductive center in Ukraine for breeding Saanen goats. We began production of milk, dairy products, and fresh cheeses, which were sold in leading retail chains under the trademarks "Semero kozenyat" and "Makovetska syrovarnya". My cheese dairy gained recognition as the first producer and processor of goat milk in Ukraine with its own technical specifications for various types of cheeses and dairy products.
As my milk production grew, so did my desire to explore new recipes. Since 2010, I've been actively studying cheesemaking in England, France, Italy, Latvia, Lithuania, Poland, Germany, Switzerland, and the Netherlands. I've also hosted European technologists to exchange knowledge.
Thanks to my own production, I was able to apply the knowledge gained from my European studies. In 2014, my farm housed up to 1000 goats, most of which were dairy animals, as well as 40 dairy cows. In my cheese dairy, I processed up to 2 tons of milk per day, producing fermented dairy products and over 50 types of different cheeses.
The art of transforming milk into cheese became my daily routine and true passion. I realized that cheesemaking was more than just cooking; it was a way to find harmony and joy in life. This discovery inspired me to share my experience so that you too could find the same peace and satisfaction that I found in cheesemaking.
Since 2015, I have been teaching cheesemaking in Ukraine and abroad. My students include owners of small craft cheese dairies as well as technologists from large cheese factories processing up to 200 tons of milk per day.
My cheese dairy continues to operate near Kyiv, in Kryukivshchyna, where I regularly conduct practical classes for those who wish to master the art of cheesemaking. Today, I share my experience in individual, practical, and online classes, teaching others the cheesemaking skills I've acquired over the years.

My story is the journey from a small farm to creating one of the first goat breeding farms in Ukraine for the Saanen breed and a successful cheese dairy.
